I heard lots of good things about the Anna Jones cookbooks. I didn’t buy them because there are so many good vegan cookbooks I want to have, that I say no to the vegetarian ones. But when I saw it the library I took it home. I was very surprised that I found so many good recipes in it. I gave these two a try:
Snelle spaghetti met boerenkool, tomaat en citroen
This is definetely one of the best basic recipes to have. It’s so simple but so full of flavours.
In this version I used the spinach.
Mijn lievelingslinzen met geroosterde tomaten en mierikswortel
Also this one looks like a boring dish, you know ‘lentils’, but oh no, this was fantastic!
For the cream cheese I made my own based on tofu.
