I thought green tea and speculoos would be a nice combination.
As a base I used the recipe for Green Tea Cupcakes from Vegan Desserts. But I left out the ginger and the candied peels. As I didn’t have enough time to make a decent frosting I used some whipped cream and topped these with crumbles from speculoos cookies.
Next time I really would like to try a speculoos frosting.
