Curried Red Bean Pilaf with Walnuts and Raisins

I did’t had any peas in the house when I made this.  But I had an eggplant, so I changed the recipe a little bit:

 

Curried Red Bean Pilaf with Walnuts & Raisins

 

Name: Curried Red Bean Pilaf with Walnuts and Raisins

Adjustments: Cube one eggplant. Pour some salt over it. Let rest for half an hour and rinse. Put the eggplant in a marinade of olive-oil, soy-sauce and concentrated apple juice. Let rest for another half an hour. Now fry in some oil or bake in the oven. Add to the pilaf.
