Mushroom Ricotta Lasagna

For this recipe I started with making the ricotta from 500 vegan recipes. But of course you can use any other recipe for vegan ricotta.

3 garlic cloves, crushed

450 g mushrooms, sliced

Saute garlic in olive oil.

Add mushrooms

Saute for 3 minutes

Add herbs

  •          1 tsp basil
  •          1 tsp organo
  •          1 tsp tarragon
  •          1 tsp paprika 

Saute for 2  minutes more

Add 4 tbsp madeira wine

Stir in:

4 tbsp tomatopaste

1 dl passata

Heat til it boils and leave it for 2 minutes.

Add salt & pepper.

Now you’re ready to layer:




vegan ricotta

repeat 2 times

and finish with some vegan mozarella
