Vegan Chicken and dumpling for the soul

This dish is from one of my latest cookbook purchases, The healthy voyager’s global kitchen.   It’s the kind of book you start to flip through and you decide: I want to try it all.  I bought it together with Chloe’s kitchen and that book gave me the exact same feeling. So next posts will probably mostly with food from those two:

Adjustments: I didn’t have faux chicken, so instead I boiled some tofu snippers‘ in a vegan chicken broth.

No fresh thyme in the house,  used some dried one.
