Risotto with peas, ‘chorizo’ and mint

A while ago I bought a  vegan chorizo, but didn’t know what to do with it.  But then I saw  this recipe from  a famous Belgian tv- cook Jeroen Meus.  With the chorizo the recipe was so easily veganized.
