Vegan Provencal meatballs in Provencal sauce (VeganMoFo 2011)

Another fast and easy recipe. It makes use of ready vegan Provencal meatballs. If you’re not able to buy them, I’m sure you can easily make them yourself. There are tons of recipes for vegan meatballs on the net.

  • 1 package Provencal meatballs from Soto
  •  4 tbsp tomatopaste
  •  1 can tomato chunks
  •  salt, pepper or cayennepepper
  •  1 tbsp applesyrup
  •  1 onion (chopped)
  •  1 garlic clove (chopped)
  •  3 carrots (cut very small)
  •  cooked green beans
  • provencal herbs
  1. Saute onion and garlic in some oil
  2. Add carrots and saute for 5 minutes more
  3. Add meatballs and fry them for a few minutes
  4. Blend tomatopaste, tomato chunks, spices, herbs and applesyrup
  5. Add this to the meatballs
  6. Add cooked green beans
Serve with rice
