Creamy spinach and pasta from the oven (VeganMoFo 2011)

Next week I will be very busy at my job. I’ll do more hours than usual. I knew this week was coming when I signed in for VeganMofo. But it will be no problem. I’m writing some posts in advance. And probably one of the next days I’ll be making this dish again which is very easy and with little work prepared:

Creamy spinach and pasta from the oven

  • 300 g pasta
  • 1/2 polony (cubed very small)*
  • 250 g spinach (from freezer)
  • butter
  • nutmeg, salt, pepper
  • 1 tbsp cornstarch
  • 2 tbsp soymilk (or other non dairy milk)
  • 2,5 dl oatcream
  • 1 cup grated vegan ‘cheeze’
* If you don’t have polony, you can easy use something else with a smoked flavour.
Preheat the oven at 180°C
  1. Boil your pasta
  2. Heat the spinach and add a little bit of butter
  3. Add nutmeg, salt and  pepper
  4. Stir in the oatcream
  5. Mix cornstarch and soymilk
  6. Stir this in the spinach
  7. Simmer for a few minutes
  8. Add cubed polony
  9. Add ‘cheeze’
  10. Prepare an ovendish and pour in the spinach mixture
  11. Cover the top with panko
  12. Put in oven.  It should be ready in 20 – 30 minutes.
