(Confess: I didn’t use fresh spinach).
And instead of tomatoes (it’s still no summer so fresh tomatoes are still horrible and very heavy on the climate):
roast tofu in a marinate of tomato paste, apple concentrate, light soy sauce, salt, pepper and paprikapowder. Or you could use ketchup.
