Ah, finally back. Didn’t saw a computer that I could use for private reasons in more than two days. Really hated it that I had to miss VeganMofo.
I made this soup a few days ago when I found out that my fridge contained a lot of root vegetables. It has parsnips, potatoes, carrots and kohlrabi in it.
It turned out very delicious. And so easy to make. Chop up your roots, saute them in some oil, add vegetable broth. After 30 to 40 minutes they should be soft. Blend your soup, spice up with salt and pepper, and serve with some soy-sauce and ‘creamer’.
