Accompaniment for pasta and a pantry soup

These goes very fine with pasta:

Roasted eggplant: oil, balsamic vinegar, salt, pepper, paprika (mix and brush the eggplant with it)
20 to 30 minutes under the oven grill, turn halfway.

Sundried tomatoes & walnut pesto: walnuts, olive oil, nutritional yeast flakes, sundried tomatoes, pepper, salt, oat cream.

This soup also doesn’t have a real recipe:

A typical (freezer) pantry soup :
1 onion, 1 tablespoon peanut butter, 1 potato, corn, green beans, vegetable broth, herb blend, passata
