Chicory sauce for pasta and crispy fried tofu slices

The crispy fried tofu slices are from Vegetarisch koken in 30 min.

For the chicory sauce:

Chop off the tops of 3 chicories, cut in half  in the length, take out the hard part and cut the remaining sheets in long strings.
Saute the chicory strips in a little oil and  simmer for 5 minutes
Add 1 tablespoon soy sauce and 1 tbsp apple syrup.

Let simmer for another 5 minutes.

Add passata (1/4 cup ) and some (spaghetti) herbs to your own taste.
