I found a recipe for beetroot sauce on this site.
It’s in dutch, so I’ll give you a translation. Also I had to veganize the recipe.
* pasta (4 servings)
* 4 beetroots
* 4 garlic cloves
* fresh ginger
* A few sprigs of rosemary or dried 1 tbsp
* 125 ml tomato paste (1/3 cup)
* 2 tablespoons soy creamer
* Parmasio (I use the recipe from 1 000 vegan recipes)
Peel the beetroots and grate. Put the beets completely underwater and bring them to the boil. Cook in 10 to 15 minutes until tender along with the rosemary.
Cook the pasta.
Chop the garlic and ginger finely and add to the beetroots together with the tomato paste.
Stir in the soy-creamer and serve on top of the pasta with the Parmasio.
