Pasta in a leek sauce & microwaved beetroots and carrots

It looks quite impressive, but in fact it’s no work at all.

Slice 2 beetroots and 1 big carrot.  Put for  3 min in the microwave and mix with 2 tablespoons canola oil and nut vinegar

Cook pasta.

Saute 1 (chopped) leek
Add 1 tablespoon paprika powder,
1 Tbsp soy sauce
1 dl soy cream
pepper

Stir in the cooked pasta.

Serve the carrots and  beetroot on top of pasta.
