Another reason why I like this recipe, is because it has chicory hidden in it. If you’re not a big fan of chicory, like me, this is really great because it’s only a small amount and in this recipe it’s accompanied with apple. A very good combination that takes away some of the bitterness.
I used a recipe from ‘Vegetarisch koken in 30 min’. It has carrots, parsnip, chicory, apple and ginger in it. I included also some passata and apple-syrup.
