Red pepper pesto and celebrating tomato season

A few years ago two different guys tried in the same week to impress me by telling that they made their own pesto.  It made me laugh twice because pesto is so easy to do.  Still I really, really like to make some  and trying out new flavours.

 – 1 jar roasted red peppers

– 3 tbsp olive oil

– 1/2 tsp balsamico

– basil (1/2 cup fresh) or 1 tbsp dried

– 3 tbsp nutritional yeast flakes

– 3 garlic cloves

– 3 tbsp almondmeal

– 1/2 tsp salt & 1/2 tsp pepper

Put your peppers in a foodprocessor and add slowly, while running the machine, all the other ingredients.  Except for the basil.  Stir the shopped basil through your pesto


And yesterday I celebrated the arrival of the tomato season by making an ordinary salad:
