Miso – pasta – broccoli – salad

Life is so busy that it’s  very hard to find some time behind my computer, and even worse, to find time to be in my kitchen.  The only food I manage to prepare are quickies like these:

Miso – pasta – broccoli – salad

300 g pasta (fussilli)

  • 1 broccoli
  • tofu rosso*
  • 2 dl soy milk
  • 1/2 tbsp light coloured miso
  • 1 tbsp  almondbutter
  • 1 tsp onion powder
  • 1 tsp  balsamico-vinegar
  •  

    1. Shop the broccoli in little flowers and steam them for a few minutes
    2. Boil your pasta
    3. Cut the tofu rosso in little cubes (+- 1 cm).  There is no problem when the cubed tofu would start to crumble.  Just ad it like that to your pasta salad.
    4. Pour the soy milk in a small pot and heat the liquid.  Add al the other ingredients and bring to a boil.  When boiling whip it fast and just for a few seconds.  Remove from your heater.  
    5. Now you can add your pasta, broccoli and tofu.
