This is a classic Belgian dish. Which is actually very easy to prepare and to veganize when you have the right ingredients. In this case it means: vegan ham. And I was so lucky to find a package from Redwood in a healthfood shop last week. Usually I find one package every 3 months or so.
Here we go:
Start with steaming your chicory for more or less 15 min.
Wrap each part in a slice of ‘ham’.
Place in an oven dish and pour over some ‘cheesy’ sauce.
I made mine by making a simple bechamel sauce, with soy-milk, and adding some nutritional yeast. And spicing it up with salt, pepper and nutmeg.
Bake in the oven at 200°C. No more than half an hour.
Even teenage girl liked her chicory a little bit this way. Usually this is served with some mashed potatoes.
