Wondering what to make for dinner this weekend?
I think I have the answer to you problem.
I know; cauliflower again. But we’re a small family of only 3 and 1 cauliflower is way to much for 1 meal.
I stole the recipe from a supermarket brochure and veganized it totally. And believe me, this dish is fabulous.
Here we go:
– 400 g minced seitan
– 1/2 cauliflower
– 1 onion
– 400 g tomato chunks
– 2 dl oat-cream
– 3 tbsp breadcrums
– 1 tbsp vegan butter/margarine
– egg-replacer (eq. 1 egg)
– 2 tbsp chickpeaflour
– 1/2 tsp tym
– 1 tsp basil
– 1/2 tsp paprikapowder
– salt and pepper
And now for some directions:
1 Slice your onion very small and mix with your seitan, egg-replacer, chickpeaflour, parsley, tym and breadcrumbs. You can add some salt and pepper too, if you would like that.
2 Use your own skills to get the cauliflower in small flowers.
3 Put the cauliflower in an oven dish (it should be large and deep).
4 Put the seitanmix on top of it and press it a little bit.
5 Make some small holes in it because now your going to pour the oat-cream over it and some of it should go down to the cauliflower.
6 Now it’s time to put the tomato-chunks on top. You can spice them up with basil, paprikapowder and the usual salt and pepper.
7 On top you put some small chunks of the vegan butter/margarine.
8 Put in the oven at 220 °C and keep it their for 1 hour. After 15 min. you have to cover it.
