Frittata-quiche

On the Eva-forum and blog I read about using the Frittata recipe from ‘Vegan with a Vengeance’ as a filling for a quiche.  So, I did. 

But I created my own thing by using leeks and walnuts.

It turned out te be a very good choice:

 

As a companion: some rice, lentils and carrots.
