Eggless omelette

I decided to follow ‘Vegan Dad’s call to try out the recipe for Vegan omelette  

from The FatFree Vegan kitchen.

It was really easy to make, and soft and a little bit crunchy on the outside.  I didn’t try to fold it.  Not when it was still in the pan.

I folded my piece when it was on my plate.   It looks great, isn’t it?

In addition I served it with pasta and Mushroom sauce from Vegan with a vengeance.
