Ah, the end of the winter is coming. Soon there will be more vegetables available. But now we still have to do it with, well, carrots. If you’re starting to be a little tired of them. Try this gratin. It’s based on the recipe for Princess potatoes from Leah Leneman’s 365 plus one Vegan Recipes.
Layer half of the potatoes and half of the carrots in a ovenproof casserole, with nutrional yeast and some margarine.
Layer the other half, again with some nutrional yeast and margarine.
Pour a mixture of soy-milk (1 dl), Soy-cream (1 dl), salt, pepper and nutmeg over the top.
Bake in the oven at 200 C°, 20 min.
