I’m a fan of ‘Vegan dad’. He has 3 small kids, a wife, an intellectual job and still manages to spend a lot of time on vegan cooking and blogging about it. I think he’s ‘Vegan superdad’.
I used his recipe of ‘Tofu ricotta’ to make some lasagna.
Start with a tomato sauce:
Fry an onion and some garlic
Add chopped red pepper
Add grinded seitan
Stir in passata and spices like pepper, salt and oregano.
Simmer for a while.

Instead of the firm tofu I used silken.
After this you can start layering.
