I made some tofu-ricotta and managed to find 4 uses for it.
First I made this ‘postelein-risotto with tofu-ricotta’ and served it with some lentil-carrot balls:

For a cheap meal there’s always tofu.
For the marinating I used this time: soy-sauce, balsamico, oil, salt, pepper, ginger and juice from a clementine.
To make the cheap meal impressive, serve it with some risotto.
To keep it cheap use onions, carrots and peas.
