There’s been a change in our little family. As from now on I have to provide food for 2 people instead of 3. That means a new challenge to me. When looking at my collections of cookbooks, I realise that almost all of them provide recipes for 4 people. As a result I will have to adapt a lot of recipes. But also it inspires me for making up recipes for 2 people.
In the future I will tag the recipes as ‘Vegan cooking for Two’. And somewhere in the near future I’ll collect the recipes on a new page on this blog.
I start with a wrap:
I had some potato salad leftovers in the fridge and I thought this would be nice to use in a wrap. The potato salad was made with a veganaise dressing. This dressing is easily made by adding some lemon juice, oil, agave syrup, soy creamer, salt and pepper to veganaise. In the salad you’ll find cucumber, tomatoes and of course boiled potatoes.
Also in the wrap lettuce, guacamole (here made with the recipe from Veganomicon) and fried faux chicken pieces.
Usually on Sundays I find some more time for cooking. That means I grab for the more serious cookbooks like Veganomicon. I learned that it usual pays when you follow the recipes from Isa and Terry precisely. I always got reward with food that has something more to it than my most of the times hurray-up cooking. A few weeks ago I prepared this:
Both Southwestern Corn Pudding and Chile Cornmeal crusten Tofu are from Veganomicon.
As I didn’t have the ingredients for the mole they suggested, I made my own:
1 cup roasted cashews,
grind in food processor
Add 1/ 2 cup parsley,
2 garlic cloves crushed,
4 tbsp passata
plus 5 sundried tomatoes.
Pulse your food-processor a few times more. Ready!!!

Lately I’m having it so busy in my life with work and a lot of other things going on, that I almost never find the time to try out new recipes or creating new ones myself. So, again, only a roundup of pictures with food I prepared before and probably also showed here before or just, plain food I prepared last week.

Carrot-pinapple sunshine muffins from veganomicon. I made these for a buffet. 2 hours before I had to leave home for going to the party I was reminded by the boyfriend that I was supposed to bring some food.

I have been neglecting you. But you know how life goes. Sometimes it can be suddenly very busy.
I have a lot of pictures to share but unfortunalety no recipes because I did’n write any down.
Most food is from my birthdayparty. I organised a ‘drunch’ and asked people to bring some veggie food. It was very fun with plenty of food. The food on the pictures were my share. The quiches didn’t turn out very well, but that was because I was in such a hurry baking them. The muffins were a big hit and I didn’t forget to remind people that they didn’t have any dairy

For the pie I used the same recipe as for the green bean & potato pie, but switched the potatoes and green beans with leek & mushrooms.It’s ‘Hummus’, ‘curried carrot dip’ and a pasta salad with ‘Marinated Italian tofu’ all from VEGANOMICON. Everything tasted great and it was a very good way to celebrate spring.
