I never heard the name of this dish before.  But I found it in this year’s BBC Good Food Vegetarian Christmas issue.  To my surprise it contains  a few exciting vegan recipes contributed by The vegetarian  Society.  To name a few: ‘Smoked bean curd bakes shiitake & walnut stuffing’ ,  ‘Leek & chestnut parcels with ginger & red pepper relish‘ and  ‘Carrot & cashew fan with warm puy lentil & dill salad‘  Some of these recipe can also be found on their website.

The recipe for this Colcannon is found in the everyday section in the magazine.

    yum, I love colcannon, best with sausages! It’s a traditionally Irish dish and quite famous there and in Scotland and the Northern parts of England. Here in the south, most people have never heard of it, either.
