The last days I didn’t make anything spectacular. My house is still one big mess because of all the rebuilding that’s going on. And really everything is covered with dust and I gave up the fight against it. It’s one week anymore and then we should have some more relaxing times for a few weeks. Because, it’s not finished yet. There is still a stair that needs to be build and a flour of glass.
But I do want to share these dishes with you:
It’s from the wonderfull ‘Veganomicon‘ and it’s great yummy food.
Slice 1 onion and saute it.
Add 1 sliced red pepper.
Add spices like 1 tsp of a curry-powder, 1/2 tsp cumin powder, 1/2 tsp garlic powder
Add 2 cubed potatoes and the juice of 1 lemon.
Add 1 cup of vegetable broth and 1 tbsp soy-sauce
Bring to a boil.
Add 1/3 of a cauliflower and 1 can chopped tomatoes
Let it go till your potatoes and cauliflower are ready.
In the end you add 1 can chickpeas, salt and pepper.
Served with rice.
Nothing special but good enough for a plain weekday.
