For this pie I used the recipe for Florentine ricotta pie from Joanne Stepaniak’s ‘The uncheese cookbook‘.
Instead of the spinach I used some carrots.
And the result was hmmm, delicious:
I’m really curious how the real thing (with spinach) would turn out.
